As is usual at Dreissigacker, we attach great importance to gentle processing when making our wines and especially when harvesting the grapes for the sparkling wine base wines. The harvest is early compared to still wines and is just as selective. Only undamaged grapes are placed by hand in small standard containers to ensure that they arrive at the Dreissigacker winery undamaged and can be processed quickly. In order to preserve the crisp acidity and light minerality, we do not leave the grapes to macerate and gently press the whole grapes for the Riesling sparkling wine immediately after the grape harvest. The base wine for our Riesling sparkling wine was 100% spontaneously fermented in a stainless steel tank. During the second fermentation, which turns the wine into sparkling wine, it was allowed to mature on the fine yeast for 15 months. The Riesling sparkling wine was produced using the traditional method of bottle fermentation and impresses with its fine mousseux and refreshing perlage. Charming, pure drinking pleasure.
