Description
The names of these three cuvA©es refer to the Philipponnat familyAs ancestors: winemakers and wine merchants, suppliers to Louis XIV, magistrates and royal mayors of Ay, a city directly connected to the Crown. All three are produced from grapes that mainly come from the best vineyards of Premiers and Grands Crus in the heart of the Champagne region, with a majority of Pinot Noir. The wines used in the blending process are obtained from the first pressing and are produced using traditional vinification methods in order to prevent premature oxidation. They are aged in the cellars for three to four years.

To the eye : Deep gold, very fine froth and small, dense bubbles. With the nose :The first nose reveals summer berries with notes of cherry and wild strawberry. Notes of citrus and grapefruit peel develop with time. With the mouth : The attack is elegant and pure. Full and ample on the palate, with good acidity and a light astringency that brings out the fruitiness.
